Fashionable Friend Friday

This week’s Fashionable Friend Friday is Greenwich native Jackie Mendive of the incredible company Empanadas On The Go.  Jackie, originally from Argentina, is locally famous for her artisanal empanadas.  Once the word got out, friends started texting constantly for her delicious handmade treats.  Jackie’s children’s friends would come over for playdates if empanadas were being served!!!  Finally, Jackie decided it was time to expand and as of January, she is cooking a few times a week in a commercial kitchen, to meet the demand of orders.  I met up with Jackie in her kitchen and picked up my own “Jackie-on-the Go” order.  I was completely speechless when I saw how beautifully made they were.  They are truly a work of art!!  I followed Jackie’s cooking instructions and WOW….they tasted as fabulous as they looked.  But not only is Jackie an amazing cook, she is all about giving back.  Two of every dozen empanadas ordered benefit Conin Pilar, an Argentinian charity that fights malnutrition in infants.  

So far the most popular empanadas are chicken, steak or ground beef and ham & cheese.  There is a kid’s empanada, a beef, and onion version made with mild spices,  also very popular and popping up in lunch boxes all around town. Cheftini’s Artichoke Frittata

I recently met the most fabulous local chef Tina DiLeo or Cheftini.  She has the most amazing recipes. You HAVE to check out her site.  She recently posted her recipe for an Artichoke Frittata and it blew me away.  I had to share it with you.  Bon Appetit!!!

Cheftini’s Artichoke Frittata

*5 eggs
* 1 small shallot, diced 

* 1 cup Artichoke hearts, drained and chopped
* 1/2cup grated parmesan or Romano
* 1/2 cup shredded mozzarella
* Olive oil for drizzling and coating
* 1/4 cup chopped fresh parsley
* 1-2 tablespoons water for diluting eggs



1. Scramble 5 eggs with a drizzle of oil and a few TBLSPS of water. Add cheeses and parsley. 
2. Sauté chopped artichoke hearts and shallots in olive oil for 3-4 minutes. 
3. Add another drizzle of olive oil and then add the egg mixture. Continue to cook on low until set. Once set put pan under broiler – on low setting- and let continue to cook until bubbly and lightly brown. Carefully remove HOT pan from oven with a mitt and let cool before transferring and cutting.

Book Club Monday

Today’s Book Club Monday choice is The Lonely House: A Biography of Emily Dickinson.  I recently saw the independent biopic A Quiet Passion about the life of this American Poet.  The movie was based upon this book, among others.  Emily Dickinson was fascinating..I love learning more about her, her life and her writings. The book goes like this: 

During her lifetime, Emily Dickinson did not seek out recognition or attempt to change the world around her, even in the smallest way. A private but not antisocial person, she kept her life’s work, and her innermost feelings, almost entirely to herself. Her life was rich in intellectual pursuits, and she had many friends with whom she exchanged witty and brilliant letters, but she rarely left the town of her birth. From the early 1860s onward, she became essentially a recluse. After her death in 1886, it was only the good judgment of her sister Lavinia that preserved the more than 1,700 poems Dickinson had secretly produced. Her poetry was so intensely individual that it immediately captivated a national audience. More than a century later, her special genius continues to surprise readers young and old.
