New England Lobster Rolls

My talented sponsor Hilary of Hilary’s Table posted a recipe of a New England Style Lobster Roll.  Just recently, my friend Maura and I, split a Lobster Roll.  We started talking about different recipes!!!  Maura, this is for you.  I cannot wait to try this recipe together!!  XO






Lobster Rolls New England Style
makes 8


Ingredients


1 1/2 pounds cooked lobster meat (about four 1 1/2 lobsters) chopped into 1/2 pieces
2 tablespoons mayonaise
1 teaspoon lemon juice
Kosher or sea salt
Freshly ground pepper
8 top-split hot dog buns
1 1/2 teaspoons unsalted butter, melted for rolls


Stir together lobster and mayonnaise.  Stir in lemon juice, season with salt and pepper.  Refrigerate while preparing rolls or for 2 hours.


Heat a large navy skillet or griddle over medium heat until hot.  Lightly brush outside of buns with butter, transfer to skillet.  Toast each side until golden brown, about 1 1/2 minute on each side.


Spoon about 1/2 cup lobster mixture into each bun.  Serve immediately.
