The Best Pumpkin Bars for A Happy Halloween

Happy Halloween!!!  I wanted to share these awesome easy pumpkin bars with you today.  Some say they have even replaced pumpkin pie in their house.  I am not sure if we can go that far over here,  but they are really good.  I hope everyone had a great Halloween.  We had the best time at the Botanical Garden, celebrating my friend Alicia’s Bday, despite the rain.  I have included some fun photos below.  Let me know if you made the bars and how they turned out!!!

Ingredients

Base

  • 15.25 oz Box Yellow Cake Mix Reserve 1 c. for topping
  • 1 egg beaten
  • 1/2 c. butter meted

Middle

  • 15 oz pumpkin puree
  • 2 eggs
  • 2/3 c. milk
  • 1/2 c. brown sugar packed
  • 3 tsp cinnamon
  • 1 tsp vanilla

Topping

  • 1 c. yellow cake mix That you reserved
  • 1/2 c. butter softened
  • 3/4 c. sugar

Instructions

  • Preheat 350 degrees
  • Mix base ingredients well and press into a 9×13 grease cake pan
  • Mix middle ingredients well and pour over base.
  • Mix topping well, until it’s crumbly and sprinkle over middle layer.
  • Bake 50-60 minutes or until it is golden brown and middle is set.
  • Serve with whipped cream on top
