It’s Better in the Bahamas

This past Spring Break we spent a few nights at the Cove in the Atlantis resort in the Bahamas.  We worked with the amazing public relations department at the hotel and our entire trip was upgraded.  They had a driver pick us up at the airport, gave us VIP treatment and checked on us constantly during our days there.  I was so impressed with the service and the amenities at the Cove.  My sister flew in to meet me from Florida.  We really had a great time. We ate a Nobu a couple of nights (our fav back home) and tried out some of the Atlantis’s award wining other restaurants as well.  On our last night we went to Jean George’s Dune in the neighboring Ocean Club, which was so incredible.  The entire dining room turned into a disco at one point.  During the day we mostly sat by the pool or beach.  This time of year the weather was amazing.  The Atlantis has a gorgeous Spa.  If you booked prior to arriving they gave you 20% off any service and upon finishing your treatment they gave you a 25% off voucher for another appointment during your stay.  I have been to many spas and never received a deal that good!!!!  One day my sister, my daughter and I went into downtown Nassau to do some shopping.  We hit the straw market for souvenirs and some of the higher end shops, where everything was much less than the New York prices, and I do mean MUCH LESS!!!!  Also the shops at the Atlantis were really great too (with the same great pricing).  And they were opened late, so we would walk around after dinner.  The Casino was also fun.  My sister loves the Casino.  On the last night I joined her and even though we both lost, it still was a highlight of our trip!!  Here are some of the photos from our days in Paradise.  For all that the Atlantis has to offer and there is soooo much more (waterparks, swimming with the dolphins, kids camps) click HERE.  It really is Better In The Bahamas!!!!!

Book Club Monday

Shrimp Scampi

I love making Shrimp Scampi for Easter.  I recently saw that my favorite food blog, It Happens At The Bean, featured this amazing version.  It is so easy to make and comes out fabulous..it is going to be a hit with my family!!!!

  1. In a skillet large enough to hold pasta, melt butter with olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute. Add wine/broth , salt, red pepper flakes and ground pepper and bring to a simmer. Let wine reduce by half, a minute or two minutes.
  2. Add shrimp and sauté until shrimp is pink, 2 -3 minutes. Stir in the parsley lemon zest and lemon juice.
  3. Add about 1/2 cup of reserved pasta water. Over medium heat add cooked pasta and breadcrumbs, stir to combine and serve.
