Chicken Breasts With Artichoke Hearts

This recipe was sent to me from a friend that received it from one of the Sacred Heart RSCJ's.  Basically the nuns from our school.  It is sooo old school, I love it so much!!!  Bon Appetit!!!


4-6 chicken breast halved, skinned and boned
1 can artichoke hearts (14 oz)
1 can Cream of Chicken Soup
2/3 cup white wine
1 cup Pepperidge Farm Stuffing Mix
Mushrooms - optional
salt & pepper to taste
1/2 stick butter

Preheat oven to 350 degrees
Rinse artichoke hearts and drain well.  Place in a 2qt. casserole dish.
Add mushrooms, if desired.
Wisk wine and chicken soup and add to dish.
Season to taste with salt and pepper
Push uncooked chicken breasts partially into the mixture, leaving part exposed for browning while cooking.
Cover with stuffing mix and pat with butter.
Cover with foil and bake for 45 min at 350 degrees.
Remove foil and continue baking until brown and chicken appears to be done, approx. 30 min.

Laundry Room Bliss

Next we need to move onto the laundry room...this is def a challenge in my house.   I have my laundry on the same floor as the bedrooms.  So, it is always on my mind.  I walk past it at least 100 times per day.  I struggle because I want it to be organized but there are so many elements that need to come together to get it there!!!  Here are some of my favorite laundry rooms....stay tuned for Friday's post with some items that I found to help get your laundry room in order!!!!

Book Club Monday

Today's Book Club Monday choice is How To Break Up with Your Phone by Catherine Price.  I saw this in a book store over the holidays and was immediately intrigued.   I put it on my list for the new year and now I am getting around to breaking it out!!!  From the reviews...I am hearing that it is a life changing must read...Here is how it goes:

An Organized Pantry is a Happy Pantry

As promised, but a day late, here are some of the best pantry storage items.  Anyone  would keep your items neat and in order.  The key is to choose one style and stick with it.  So, for example, all the baskets should be the same and all "dry" containers should be the same.  Keep items organized by purpose and all baking goods together, all cans together, rice and potatoes together, pastas together.  Cereal, flour, nuts, and other "dry goods" can be stored in plastic containers.  There should be one basket devoted to "chips and snacks".   Happy Organizing!!!!

Easy Beef Stroganoff

Ok..Here is a crowd pleaser...I made this tonight and it was a hit...It was so easy and soooo good.  I am def going to add this to my meal rotation.  I added carrots to mine FYI!!!!  Bon Appetit.

3 lbs Stew Beef (approx 1/2 lb per person)
1 carton beef stock
2 cans cream of mushroom soup
1 envelope Lipton's onion soup mix
salt and pepper to taste
Egg Noodles (or this gluten free version)
1/2 stick butter

Put beef, beef stock, mushroom soup, onion soup mix and season with salt and pepper in your crock pot.
Set Crock Pot on High for 4 hours
When the meat is done, boil egg noodles, drain and mix with butter.
Spoon the meat over the noodles.  Serve

**** If it gets too thick add a little more beef stock but mine really didn't

Fairfield County Antique and Design Center

Yesterday I visited the new location of the Fairfield County Antique and Design center in Norwalk, CT.  My sponsor, Iconic Modern Home just moved with them into the new space with their own stand alone showroom and entrance..  OMG!!!! It is Fabulous...The 12,000 square foot multi dealer center (over 40 dealers total) is filled with incredible styles of art, furniture, jewelry, clothing, accessories for the home and so much more...I fell in love with was soooooo hard to narrow it down for one post...but here is a sneak peek of the center.  I walked around for a while and I thought the selection was much better and the prices more attractive than other similar places I have been to in the past.  YOU HAVE TO GO and see this gem for yourself...for more information and directions, click HERE.

There was an incredible mix of mid-century and traditional looks in every corner!!!

The light fixtures were out of this world!!!!

This will be the new Iconic Modern space...look at all that incredible furniture they use for staging and its all for sale too!!!!!

Each dealer's booth was so eclectic...How cool would that buddha be on a console or dining table?

I love love this mid-century chair!!!  It was one of the first things that caught my eye.   And, the vintage subway sign too!!!!

There was a whole case of Vintage Tiffany silver....AMAZING!!!!

I fell in love with this vintage Courreges necklace!!!  I cannot believe I left it there..if anyone in my family is reading this......I'll take it for my Bday!!!!! HA!!!!!

I cannot decide if I love the shoes or the pillow or the rug more!!!!!!!!!!

Perfecting Your Pantry

About a year and 1/2 ago I set out to make my pantry perfect.  With 3 teenagers going in and out and me looking for all my cooking ingredients daily, needless to say it stays organized for about 5 min.  I am going to embark on this project yet again and really needed some inspiration...Here is what I came up with...I love how organized these pantries are.  And, the accessories are incredible.  I am going to spend the next couple of days finding just the right items to tidy up my space.  Stay tuned for Friday's post with my favs finds and links to purchase!!!!

Book Club Monday

Happy Martin Luther King Day!!!  WOW it's cold in NY.    I decided to hibernate in my house with the BEST book..if you are a The Holiday or Love Actually movie are going to LOVE One Day In December by Josie Silver!!!!  I finished it in 2 nights......Here is the story:
