Happy Cinco de Mayo!! Today we celebrate the traditions of Mexico and our LOVE for Mexican food. I have been searching for a quick easy and healthy Guacamole recipe and I think I have found it. Break out the chips! Olé.
3 medium Avocados
1 firm tomatoes, finely diced
1/2 white onion, diced
1/2 cup chopped cilantro
2 tbsp fresh lemon or lime juice
optional sea salt and pepper to taste
- Open the avocados and and scoop out the flesh
- Mash the flesh with a fork
- Stir in the other ingredients
- If you store in the refrigerator, cover with plastic wrap. TIP: Make sure the plastic touches the guacamole so that air does not come in contact with it (it will turn brown!).
